Courgette with anchovies and onion

250gr vegetables p.p.
Ingredients
2 persons
1 tbsp oil |
400g courgette |
thyme |
1 onion |
1/2 can anchovy fillets |
Preparation
1. Chop the anchovy fillets.
2. Clean the onion and courgettes.
3. Cut the onion into half rings. Halve the courgettes lengthwise and slice the halves.
4. Heat the oil and melt the anchovies in it.
5. Gently fry the onion rings with it.
6. Add the courgette and braise the vegetables for 5 minutes until tender.
7. Season the vegetables with thyme.
Menu suggestion: Delicious with cod fillet and potatoes.
