Courgette with lemon

300gr vegetables p.p.
Ingredients
2 persons
lemon juice |
1-2 courgettes |
1 teaspoon grated lemon zest |
1 tablespoon pine nuts |
1 tablespoon oil |
1 clove garlic |
Preparation
1. Toast the pine nuts in a dry frying pan until golden brown. Let them cool down.
2. Wash the courgettes and halve them lengthwise. Cut the halves into narrow slices.
3. Clean the garlic and slice the clove.
4. Heat the oil and fry the courgette and garlic in it for a few minutes until tender.
5. Season the vegetables with the grated lemon zest and some lemon juice. Sprinkle with the pine nuts.
Menu suggestion: Delicious with chicken and potatoes.
