Courgette soup with salmon

300gr vegetables p.p.
Ingredients
2 persons
2 courgettes |
1 tablespoon dill (fresh or frozen) |
150g smoked salmon |
1 tablespoon oil |
1 onion |
1 clove garlic |
¼ stock cube with less salt |
Preparation
1. Clean and chop the onion and garlic small.
2. Wash the courgettes and cut into cubes.
3. Fry the onion and garlic gently in the oil.
4. Add the diced courgettes and some pepper and pour in 2½ dl water with the piece of stock cube.
5. Bring to the boil and cook the courgettes for 10 minutes.
6. Puree the soup with a hand blender or in a food processor.
7. Cut the salmon into strips.
8. Stir the salmon into the soup and season the soup with dill.
Menu suggestion: Delicious with wholemeal bread.
