310gr vegetables p.p.

Ingredients

350g whole-wheat penne
1 kilo broccoli in florets
300g diced chicken breast
1 red onion chopped
2 garlic cloves pressed
100g ricotta cheese
1 diced yellow pepper
7g fresh basil finely chopped
4 tablespoons Grana Padano 32+ cheese
4 tablespoons pine nuts
olive oil
pepper

Preparation

If there is one type of dish that always sits well, it is a quick pasta. It is one of the few dishes that Brenda Kookt! kids always eat well, they feast on it every time. The diced broccoli and pepper provide not only colour, but also bite and vitamins.

  1. Cook the pasta according to the instructions on the packet.
  2. In another pan, cook the broccoli florets al dente.
  3. Heat a little oil in a large pan and fry the chicken in it all around. Then add the onion and garlic and fry briefly. Then add the diced peppers and ricotta and heat through. Season with pepper and stir until the sauce forms.
  4. Then stir the cooked pasta and broccoli into the sauce.
  5. Garnish the pasta on the plate with fresh basil, Grana Padano and pine nuts.

Note: this recipe is for two adults and two children. Adjust the quantities slightly for four adults.
