Fennel with orange and mint

360gr vegetables p.p. & 130gr fruit p.p.
Ingredients
2 persons
| 1 teaspoon honey |
| 2 oranges |
| 2 fennel tubers |
| 6 mint leaves |
| 1 tablespoon oil |
| 1 teaspoon mustard |
Preparation
1. Peel the oranges thickly. Cut the segments from the membranes. Collect the juice.
2. Clean the fennel. Cut the fennel very finely.
3. Make a dressing from the collected orange juice, oil, mustard and honey.
4. Snip the mint leaves small.
5. Mix everything through the fennel. Add some honey or pepper if necessary.
Menu suggestion: Delicious with lentils and baked potatoes.
