Mint

This herb is known and loved for its fresh taste. Mint originally grows in countries around the Mediterranean Sea. Nowadays, mint is grown in top quality in Dutch greenhouses. The fresh leaves are delicious with fruit and vegetable dishes. The name comes from the nymph Mentha. She was loved by Pluto and turned into mint by the jealous Proserpina.

Preparation & storage

    Storage
A mint plant does well in the windowsill, on the balcony or in the garden. Water the plant every other day.

You can keep mint sprigs in a damp kitchen paper in the fridge for a few days.

You can keep mint in the freezer in a tightly sealed plastic bag for up to 12 months.

You can also freeze or dry mint.

    Freezing is done like this:

    1. Wash the mint.
    2. Pat the mint dry with some kitchen paper.
    3. Wrap them in sandwich bags.
    4. Then freeze them immediately.

    Drying is done like this:

    1. Spread the leaves on a clean (dry) tea towel.
    2. Turn them over occasionally.
    3. Can you crumble them? Then they have dried. This can take about 2 weeks.
    4. Store the leaves in a sealable jar or container. Store in a cool, dry and dark place.

    Preparation
Fresh mint has the most flavour. Do not heat the leaves, add them at the end of cooking time. Whole leaves are nice as a garnish.
