Cucumber salad with mint

300gr vegetables p.p.
Ingredients
2 persons
100g cherry tomatoes |
6 mint leaves |
lemon juice |
1 large cucumber (approx. 500g) |
½ tablespoon fish sauce |
Preparation
1. Peel and halve the cucumber lengthwise.
2. Scrape out the seeds with a spoon. Cut the halves into narrow curves. Wash and halve the cherry tomatoes.
3. Wash the mint and cut the leaves small.
4. Mix the tomatoes, mint, fish sauce and some lemon juice with the cucumber.
Menu suggestion: Serve with spicy stuffed mackerel and brown rice.
