Gamba salad with Elstar, mint and rocket salad

15gr vegetables p.p. & 120gr fruit p.p.
Ingredients
2 persons
10 raw prawns peeled and gutted |
1 tablespoon honey |
1 tablespoon olive oil |
small handful of mint |
1 lemon |
1 red chilli |
2 Elstar apples |
1 clove garlic |
approx. 30 g arugula |
Preparation
1. Peel and slice the apples.
2. Clean the garlic and chop finely.
3. Squeeze out the juice of the lemon.
4. Remove the seeds from the chilli and chop finely.
5. Mix the Elstar and prawns with the honey, lemon juice, garlic, chilli, mint and leave to marinade for 1 hour.
6. Remove the prawns from the marinade and heat the oil in the pan. Fry the prawns for 1 minute, add the marinade and fry for another 1 minute.
7. Divide the rocket salad between 2 plates and spoon the Elstar prawn mixture on top. Serve immediately. Enjoy your meal!
