Fresh apple salad with fresh goat cheese

100gr vegetables p.p. & 135gr fruit p.p.
Ingredients
2 persons
200g mixed lettuce in pieces |
2 apples |
1 teaspoon vinegar |
lemon juice |
pepper |
50g fresh goat cheese |
1/2 tablespoon honey |
1 tablespoon olive oil |
1 teaspoon mustard |
25g unsalted walnuts |
Preparation
1. Whisk the mustard, honey, oil, vinegar and freshly ground pepper and into a dressing.
2. Slice the apples and drizzle with lemon juice.
3. Crumble the fresh goat's cheese and chop the walnuts.
4. Divide the lettuce, apple, goat cheese and walnuts between 2 plates. Enjoy your meal!
