Aubergine rolls

130gr vegetables p.p.
Ingredients
8 persons
2 aubergines |
16 basil leaves or 16 mint leaves |
1 bowl of cherry tomatoes |
100 - 125g fresh goat cheese or mozzarella |
pepper |
2 tablespoons (garlic) oil |
Preparation
Remove the ends of the aubergines. Cut them lengthwise into slices about 1 cm thick (about 8 slices per aubergine).
2. Place 4 aubergine slices, side by side, between kitchen paper. Heat the aubergine in the microwave until the slices are just soft (750 Watt, approx. 1 minute). Repeat until all slices are soft.
3. Brush the aubergine slices with (garlic) oil and sprinkle with freshly ground pepper.
4. Cut the mozzarella into strips or crumble the fresh goat cheese.
5. Top each aubergine slice with a basil or mint leaf and a slice of mozzarella or some goat cheese.
6. Roll up the aubergine slices and secure with a cocktail stick.
7. Garnish the aubergine rolls with a cherry tomato. Enjoy!
Good to know: This recipe assumes 2 aubergine rolls per person, count 4 aubergine rolls per person for lunch.
