Mexican fajitas with peppers

215gr vegetables p.p.
Ingredients
2 persons
| 2 spring onions |
| 1 lime |
| 1 green pepper |
| 2 tablespoons of spicy chilli oil |
| 200 grams of steak |
| 2 peppers e.g. red or yellow or green |
| 1 small avocado (80 g) |
| 4 whole-wheat wraps |
| pepper |
| 4 - 5 sprigs of fresh coriander |
Preparation
1. Remove stem and seeds from peppers and cut into thin half rings.
2. Cut the spring onions into diagonal rings.
3. Squeeze the lime.
4. Halve the pepper, remove seeds and cut finely.
5. Finely chop the sprigs and leaves of the coriander.
6. Mix the spicy oil with 2 tablespoons of lime juice and a good twist of pepper.
7. Cut the steak perpendicularly to the meat strand into narrow slices. Spoon them with the marinade and marinate for at least 2 hours, but 24 hours is also possible.
Halve the avocado. Remove the stone and take the avocado halves out of the skin with a spoon. Cut the avocado halves into small cubes and toss with 1 tablespoon of lime juice to prevent discolouration.
9. Mix avocado cubes, spring onions, freshly ground pepper and coriander together and add some finely chopped green pepper to taste.
10. Preheat a frying pan dry and heat the wraps in it for 20 seconds on each side. Keep them warm in aluminium foil.
11. Grill the marinated steak strips. Do not do this for too long or the meat will become tough.
Fill the wraps with meat strips and peppers, spoon some avocado salsa on top. Enjoy your meal!
