Sweet potato 'toast' with corn salad, cottage cheese and balsamic tomatoes

100gr vegetables p.p.
Ingredients
2 sweet potatoes (assume 2 slices per serving if potatoes are small 3 pieces) |
150 g cottage cheese |
100 g cherry tomatoes halved |
40 g lamb's lettuce |
10 g basil coarsely chopped |
2 tbsp balsamic vinegar |
Preparation
1. Cut the sweet potato lengthwise into 1-centimetre-thick slices. Grill the slices in a grill pan or under a grill iron. The toast will be ready in about 10 minutes.
2. Mix the cherry tomatoes with the balsamic vinegar. Set aside.
3. Build up the toast. Divide the lamb's lettuce over the toast, followed by the cottage cheese, cherry tomatoes and basil. Serve immediately!
