Teriyaki potato skewers

125gr vegetables p.p.
Ingredients
2 persons
3 unpeeled firm-boiled potatoes |
1 tablespoon of sesame oil and some oil for greasing |
1 ball of ginger |
1 small courgette (approx. 250g) |
1 tablespoon of soy sauce |
8 skewers (wooden skewers pre-soaked in cold water) |
Preparation
1. Scrub the potatoes thoroughly. Cook them in their skins for about 15 minutes until almost tender.
2, Meanwhile, make a marinade of the soy sauce and sesame oil. Press the ginger on top with a garlic press and whisk well.
3. Peel the potatoes and cut them with the courgette into not too small cubes of equal size (approx. 2.5 by 2.5 cm).
4. First let the potato cubes marinate for 10 minutes, then add the courgette and let it marinate for another 10 minutes (quick method: let potato cubes marinate together with courgette cubes for 10 minutes). 5. Thread about 8 skewers, alternating potato and courgette.
Heat a grill pan. Grease it well with oil and grill the skewers for 6-8 minutes until cooked and browned. Enjoy!
