Tomato salad with sardines

Tomato salad with sardines
With seasonal products

255gr vegetables p.p.

Ingredients

2 persons

2 tablespoons olive oil
½ small onion
5 seedless olives
5 (pomodori) tomatoes
½ tablespoon lemon juice
15 basil leaves
1 can of sardines

Preparation

1. Wash the basil and cut the leaves into narrow strips.
2. Make a dressing from the lemon juice, half a tablespoon of water, the oil, basil and some pepper.
3. Wash the tomatoes and cut into wedges. Spoon in the dressing.
4. Cut the onion into half rings and the olives into pieces.
5. Drain the sardines well. Do not pat them dry, this will keep them whole. Halve the sardines lengthwise.
6. Sprinkle the onion and olives over the tomatoes and arrange the sardines between them.

Tip: Delicious with toasted bread!
