



Alfalfa




Alfalfa is the Dutch name of the sprout vegetable Luzerne. The name Al-fal-fa comes from Arabic and means 'father of all food' or the 'best food'. Alfalfa is remarkably rich in calcium. In addition, it is a deliciously fresh vegetable. A small raw pick adds just a little something extra.

Storage
In the vegetable compartment of the fridge, alfalfa will keep for 2-3 days. You store alfalfa in its packaging. Throw away the packaging immediately when you take out the sprouts.
Prepare
You can add alfalfa to hot dishes. Add it at the end of the preparation and let it warm up well.

Heat the sprouts: briefly immerse in boiling water (5 seconds) or stir-fry with the meal.
Cleaning alfalfa
It is a good idea to wash alfalfa well before use and at least briefly dip it in hot water.
Alfalfa is also edible raw. However, there is a risk that raw alfalfa (like bean sprouts) may be contaminated with various bacteria such as salmonella or E. coli. Small children, the elderly and people with diminishing resistance should pay particular attention to this.
This way you reduce the risk:
- It is important to wash alfalfa well under running water before use.
- Store the sprouts in the fridge (4°C).
- Heat the sprouts: briefly immerse in boiling water (5 seconds) or stir-fry them with your meal.
