Taugé is the sprouted mung bean. This bean is also known as katjang idjoe or 'green bean'. Taugé is often used in Chinese cuisine, including in spring rolls. Bean sprouts are rich in vitamin B, vitamin C and iron. Bean sprouts are very tasty and healthy. It is also a nice decorative addition to delicious vegetable dishes. Bean sprouts are best kept in the fridge.

Preparation & storage

    Storage
    Bean sprouts will keep for 2 days in the crisper section of the fridge. You store bean sprouts in their packaging. Throw away the packaging immediately when you take out the sprouts.

    Prepare
    Bean sprouts can be added to hot dishes. Add it at the end of the preparation and let it warm up well.

    Always heat the sprouts.

    You can use the following times:
    Cooking: 0.5 - 1 minute
    Stir-frying: 1 - 2 minutes
    Microwave oven: 2 - 3 minutes
    Steaming: 3 - 5 minutes

    Want to use the bean sprouts raw? Then dip the bean sprouts briefly in boiling water (5 seconds).

    Cleaning bean sprouts

    It is a good idea to wash bean sprouts well before use and at least briefly submerge them in hot water.

    Bean sprouts are also edible raw. There is a risk that raw bean sprouts (like alfalfa) may be contaminated with various bacteria such as salmonella or E. coli. Small children, the elderly and people with diminishing immunity should be especially wary of this.

    This is how you reduce the risk:

    • It is important to wash bean sprouts well under running water before use.
    • Store the sprouts in the fridge (4°C).
    • Heat the sprouts: briefly immerse in boiling water (5 seconds) or stir-fry them with your meal.

    Bean sprouts can, for instance, be spooned raw over gado gado or fried or cooked in a western or eastern vegetable or meat dish. Fry and cook bean sprouts briefly to keep them crunchy.
