


Baby bananas



Baby bananas are small bananas. The skin of these bananas is slightly thinner than that of an ordinary banana. Bananas contain several vitamins and minerals; they are rich in vitamin B6 and potassium. Contrary to what most people think, bananas do not grow on a tree but on a banana plant, which is actually an herb.

(Baby) bananas cannot withstand cold, as this stops their ripening and results in immediate spoilage.
So do not store the bananas in the fridge, but in a cool place (12-15ºC). Then they will keep for about 2-6 days.
Unripe bananas ripen on the fruit peel. Depending on the variety, this takes 1 to 4 days. During ripening, starch is converted into sugar.
There is 20 times more starch than sugar in unripe bananas. At the end of ripening, this is reversed. Then it contains 20 times more sugar than starch. This gives ripe bananas a sweeter taste.

A baby banana is very easy to peel.
After peeling, a banana discolours quickly. Sprinkle the banana with lemon juice to prevent this from happening.
