Banana

The banana is an elongated, slightly curved fruit. Contrary to what most people think, bananas do not grow on a tree but on a plant, which is actually an herb. Bananas have a sweet taste and contain several vitamins and minerals, including vitamin B6 and potassium.

Preparation & storage

    Storage
Bananas cannot withstand cold, then their ripening stops and spoilage occurs immediately.

So don't store bananas in the fridge, but in a cool place (12-15ºC). Then they will keep for about 2-6 days.

Unripe bananas ripen on the fruit peel. Depending on the variety, this takes 1 to 4 days. During ripening, starch is converted into sugar.

There is 20 times more starch than sugar in unripe bananas. At the end of ripening, this is reversed. Then it contains 20 times more sugar than starch. This gives ripe bananas a sweeter flavour.

    Preparation
A banana is very easy to peel. If a monkey can peel a banana, so can you ;-)!

After peeling, a banana discolours quickly. Sprinkle the banana with lemon juice to prevent this.
