Ceps are also known as cèpes or porcini. It is an edible mushroom from the boletus family. It is a real delicacy. The mushroom has a delicate, slightly nutty flavour. The cap of the mushroom is brown and the flesh is white. The mushroom can grow up to 25 cm tall. Ceps are not cultivated and therefore only grow in the wild. Ceps can also be used in dried form.

Preparation & storage

    Ceps can be kept in the fridge for 1-3 days.

    Dried ceps can be kept in a dark and cool place for a few months.

    You can also dry ceps yourself.

    Drying ceps yourself is done like this:

    1. Place the slices on baking paper or on a grid.
    2. Slide the slices into the oven at 50°C. Leave the door ajar with a tea towel in between to allow the moisture to escape.
    3. They are ready when they are dry but still elastic to the touch. This takes about 8 hours.
    4. Before using, you can soak dried porcini mushrooms in warm water or broth.

    Use dried ceps for a vegetarian broth or for in risotto and pasta. The flavour is very intense.

    Preparation times

    Cooking: 5 - 7 minutes
    Stir-frying: 2 - 4 minutes
    Microwave oven: 2 - 3 minutes
    Grilling: 2 - 4 minutes
    Braising: approx. 10 minutes
    Steaming: approx. 6 minutes

    Cleaning ceps

    Brush off sand and dirt with a brush or kitchen paper. Washing is not necessary.
