


King oyster mushroom (Eryngii)



The Eryngii is also known as the king oyster mushroom. This mushroom has a velvety light grey-brown cap and a large firm white stem. The mushroom grows in clusters. The whole mushroom is very flavourful and has a slightly spicy taste.

Storage
Store king oyster mushroom in the fridge at a temperature of between 4° and 7°C. King oyster mushrooms can then be kept for 5-7 days.

Cut a piece off the bottom of the stalk, then cut into slices or quarters.

Cleaning the royal oyster mushroom (Eryngii)
Clean dry with a kitchen paper or mushroom brush. Do not wash, or they will fill up with water, losing their flavour.
