


Oyster mushroom



The oyster mushroom is the Netherlands' best-known mushroom after the mushroom. The shape of an oyster mushroom resembles that of an oyster shell, hence the name. The most common species are the brown-grey and the light purple oyster mushroom. In the wild, oyster mushrooms grow on tree trunks and dead wood. They are grown on a mixture of straw and water.

Storage
Oyster mushrooms are packed in boxes or on trays. Store oyster mushrooms in their original packaging in the fridge. They will then keep for up to 2-3 days.
Leave them in the packaging to prevent dehydration. Do not store mushrooms with strong-smelling vegetables, such as leeks and onions, as they easily pick up odours.
Prepare
Cut a piece from the bottom of the stalk, then cut into strips or slices.
Oyster mushrooms have soft flesh and should only be heated for a few minutes, otherwise they lose their firmness.
Oyster mushrooms contain less water than mushrooms and therefore do not shrink when cooked.

Stir-frying: 2-4 minutes
Microwave oven: 2-3 minutes
Deep-frying: 2-4 minutes
Grilling: 2-4 minutes
Braising: approx. 10 minutes
Steaming: approx. 6 minutes
Cleaning oyster mushrooms
Clean the oyster mushrooms by gently rubbing them clean with a piece of damp kitchen paper or a mushroom brush.
