Preparation & storage
Storage
Ideally, use yellow oyster mushroom as fresh as possible. Store yellow oyster mushrooms in the fridge at a temperature of between 4° and 7°C. They can then be kept for up to 3 days.
Leave them in their packaging to prevent them drying out. Do not store mushrooms with strong-smelling vegetables, such as leeks and onions, as they easily pick up odours.
Preparation
Cut a piece off the bottom of the stalk, then slice or quarter them.
Like other mushrooms, do not boil, fry or braise them too long. Then the yellow oyster mushroom will lose firmness and flavour.
