


Yellow funnel chanterelle



The funnel chanterelle (Cantharellus Tubaeformis) is also known as an autumnal alternative to the common chanterelle. The yellow funnel chanterelle has a subtle, fruity aroma and flavour. The mushrooms are not very fleshy. Another special feature, the yellow funnel chanterelle does not lose its firmness due to moisture.

Storage
Use yellow funnel chanterelle preferably as fresh as possible. Store yellow funnel chanterelle in the fridge at a temperature between 4° and 7°C. They will then keep for up to 2-3 days.
Leave them in the packaging to avoid drying out. Do not store mushrooms with strong-smelling vegetables, such as leeks and onions, as they easily pick up odours.

Cut a piece off the bottom of the stalk, then slice or quarter them.
Like other mushrooms, do not boil, fry or braise them too long. Then the yellow oyster mushroom will lose its flavour.

Microwave oven: 2-3 minutes
Deep-frying: 2-4 minutes

Cleaning the yellow funnel chanterelle
Clean dry with a kitchen paper or mushroom brush. Do not wash, or they will fill up with water, losing flavour.
