The chanterelle is also called cock's comb or yolk mushroom. It is a funnel-shaped mushroom. Its colour ranges from orange-yellow to grey. For a long time, chanterelles could only be picked 'wild'. They are still found in the wild, but they are also cultivated today. The chanterelle is very popular in France, where it is called 'girolle'.

Preparation & storage

    Storage
    Of all fresh mushrooms, chanterelles can perhaps be stored the longest. Store chanterelles in the fridge, preferably in a paper bag. Assume about 3-5 days. Chanterelles can quickly take on odours. Therefore, do not place them next to onions, garlic or leeks.

    Preparing
    Cut off an end of the stem. Wipe away any earthiness with a paper towel or mushroom brush. Do this just before cooking.

    Always add chanterelles at the last moment of preparation, as they can quickly become tough.

    Cooking: 5-7 minutes
    Stir-frying: 2-4 minutes
    Microwave oven: 2-3 minutes
    Deep-frying: 2-4 minutes
    Grilling: 2-4 minutes
    Braising: approx. 10 minutes
    Steaming: approx. 6 minutes

    Cleaning chanterelles

    You clean chanterelles dry. Mushrooms are like little sponges. If you put them in water, they fill up with water, which causes loss of flavour.
