The beech mushroom (Shimeji) is actually a collective name for up to 20 species of mushrooms. In the Netherlands, we only see the white and brown varieties. These beech mushrooms have a nutty flavour and a firm texture. You can eat both the thin stem and the semi-circular cap.

Preparation & storage

    Storage
    It is best to leave the beech mushrooms on the ground until you are going to use them. Preferably use the beech mushrooms as soon as possible.

    You can use them at the bottom for a few days in the fridge.

    Do not store mushrooms with strong-smelling vegetables, such as leeks and onions, as they easily pick up odours.

    How do I know if the beech mushroom is no longer good? Beech mushrooms emit a sour smell, are limp or mouldy. You can quickly recognise decay by smelling, looking and tasting.

    Prepare
    Cut the mushrooms loose from the bottom. You can throw away the base. Do not eat the mushrooms raw.

    Cut a small piece off the bottom before use.

    Beech mushrooms can be prepared whole. Like other mushrooms, do not boil, fry or braise them too long, as they will lose their firmness and flavour.

    Refrigerator: 3 days

    Cooking: 5 - 7 minutes
    Stir-frying: 2 - 4 minutes
    Microwave oven: 2 - 3 minutes
    Deep-frying: 2 - 4 minutes
    Grilling: 2 - 4 minutes
    Braising: approx. 10 minutes
    Steaming: approx. 6 minutes
