

Almond mushroom


Its distinctive almond flavour and aroma is special. The almond mushroom has a characteristic shape, resembling a whimsically shaped mushroom. The cap is brown and the stalk is white in colour and thicker and longer than that of the mushroom. The flesh is firm. A delicious mushroom for use in soup, salad, meat and fish dishes, for example.

Storage
Ideally, use almond mushrooms as fresh as possible.
You can store them in the fridge. Mushrooms retain their quality best at a temperature of between 4°C and 7°C. They can then be kept for 2 to 3 days.
It is best to leave the mushrooms in their packaging.
If they are loose mushrooms, do not put them in a sealed plastic bag. This suffocates them, making them moist and unsightly. A paper bag or a dry tea towel will do.
Do not store them with strong-smelling vegetables such as leeks and onions. Mushrooms easily pick up odours. And do not store them with fruit either, as they will age faster.
Preparing
After cleaning, cut the bottom of the stalk and then slice or quarter the mushrooms. Small specimens can also be left whole.

Deep-frying: 2-4 minutes
Grilling: 2-4 minutes

Cleaning almond mushrooms
Clean the almond mushrooms with a damp kitchen paper or a mushroom brush. Do this only just before cooking.
You clean mushrooms dry. If you put them in water, they fill up. They release that water when cooking and some of the flavour is lost.
