


Meadow ring fungus



The meadow ring fungus is a small wild mushroom. The meadow ring fungus occurs in summer and autumn. The fungus can be found along road verges, forest edges, lawns, meadows and heaths. The meadow ring fungus has a remarkable amount of smell and taste for such a small fungus. Dried specimens have an even more intense smell.

Storage
Use the meadow ring mushroom as fresh as possible. Store it in the fridge at a temperature of between 4° and 7°C. You can then store this fungus for 3-5 days.

Cut a piece off the bottom of the stalk, then slice or quarter it.
Beware, the meadow mushroom is poisonous raw. This poison disappears when the fungus is heated or dried.

Cleaning meadow mushrooms
Clean dry with a kitchen paper or mushroom brush. Do not wash, or they will fill up with water, losing their flavour.
