The Purple Knight's Mushroom owes its name to its purple colour, which is mainly seen on the stem. Purple fungal fluff can occur on the stems. This is a typical characteristic of the Purple Knight's Mushroom. This fluff is related to soil conditions. If the nutrient soil becomes/is poor, this edible fluff forms.

Keep purple knight's mushroom in the fridge at a temperature of between 4° and 7°C. Purple horse mushroom can then be kept for up to 5 days.

Cut a piece off the bottom of the stalk, then slice or quarter. Note: The purple knight's mushroom should NOT be processed raw.

Stir-frying: 2-4 minutes

Cleaning the purple horse mushroom
Clean dry with a kitchen paper or mushroom brush. Do not wash, or they will fill up with water, losing flavour.
