Elephant garlic is a giant variety of garlic. Unlike its coarse appearance, its flavour and aroma is mild, delicate and sometimes even slightly sweet. Like regular garlic, elephant garlic contains the sulphur compound (allyl-methyl-sulphide) that creates the typical garlic smell. The smell is more subtle than with ordinary garlic.

Preparation & storage

    Storage
    Store (dried) garlic in a cool place (12-15ºC). In a pantry, kitchen cupboard or cellar. Make sure garlic is not kept too warm, otherwise the cloves will sprout.

    In the freezer, garlic can be kept for up to 3 months at a minimum of -18ºC. Store garlic in a tightly sealed plastic bag or container.

    Prepare
    Peel the garlic. Peeling the giant cloves is much easier than peeling the familiar small cloves.
    Then slice or chop the cloves finely.

    Storage: 2 months
    Freezer: 3 months

    Preparation times

    Fruiting: 2-4 minutes
    Puffing: 45 minutes
