

Glasswort


This tender, crunchy, slightly salty sea vegetable surprises everyone. Zeelanders have known the vegetable for some time, especially in combination with fish. Recently, the vegetable has also been cultivated in Zeeland. Marsh samphire is a pioneer plant. The plant is resistant to salty conditions like no other. The plant absorbs salt as it grows, giving it a salty taste. It is best to keep marsh samphire in the fridge.

The vegetable will keep for about 7 days in the fridge.
Preparation
Remove the lower stiff and woody parts of glasswort. Wash quickly in running cold water.
Blanch for a few minutes or stir-fry with onion.
