Green asparagus

Green asparagus is the shoots on the root of the asparagus plant. Unlike white asparagus, the green variety actually grows in the light. As a result, its flavour is a bit stronger and spicier than white asparagus. Green asparagus does not need to be peeled and is very tasty for wok or salad. Asparagus contains a lot of dietary fibre and is therefore very good for your digestion.

Preparation & storage

    Storing green asparagus

    Green asparagus is best stored in an open plastic bag in the fridge. They will then keep for a few days. It is best to keep the underside of the green and purple asparagus wet, though. You can also freeze them, either blanched or unblanched. Blanched green asparagus do keep a bit longer, about a year after freezing.

    Preparing green asparagus

    You don't need to peel green asparagus. Boil the asparagus in plenty of water with some salt. How long you need to cook green asparagus and depends on their thickness and personal preference. Green asparagus are al dente in 2-3 minutes. Do you prefer them soft? Then stick to a cooking time of 5-6 minutes.

    You can also wok, fry or grill green asparagus, in which case you don't need to boil/blanch them first. Do this for about 3-5 minutes.

    Cooking: 3 - 6 minutes
    Grilling: 3 - 5 minutes
    Stir-frying: 3 - 5 minutes
    Deep-frying: 3 - 4 minutes

    Cleaning green asparagus

    A nice advantage of green asparagus: you don't need to peel them. Just remove the woody lower ends.
