Ingredients
3 garlic cloves |

1 courgette |
100g carrots |
2 red onions |
4 spring onions |
1 red pepper |
4 tablespoons olive oil |
250g green asparagus |
2 plum vine tomatoes |
freshly ground pepper |
Preparation
'A la plancha' is Spanish for grilled or roasted. The herb oil and smoky bbq flavour give the vegetables an extra flavour boost.
- Clean and finely grate the garlic and mix into the olive oil, then stir in some finely chopped rosemary or thyme and freshly ground pepper to taste.
- Clean the vegetables, cut them into roughly equal pieces.
- Blanch the courgette and carrots in boiling water for 2 minutes.
- Coat all the vegetables with the 'herb oil' and grill them on the 'plancha' or in the grill pan or on the hot BBQ.
Menu suggestion: Serve the vegetables with a homemade garlic-yoghurt sauce, fried baby potatoes and a piece of chicken filet/meat substitute.
