Grilled vegetables with mushrooms

Grilled vegetables with mushrooms

500gr vegetables p.p.

Ingredients

2 persons

1 fennel
1 pepper
1 courgette
100 grams of mushrooms
1 tablespoon of oil
thyme

Preparation

1. Clean the vegetables. Thinly slice the fennel, shave the courgette into thin slices, cut the pepper into strips and slice the mushrooms.
2. Drizzle some oil over the vegetables.
3. Heat a grill pan or heat the oven's grill. Grill the vegetables until tender in a few minutes.
4. Let the vegetables cool and sprinkle with some pepper and thyme.

Menu suggestion: Delicious with an omelette and potatoes.
