Grilled aubergine with goat cheese

400gr vegetables p.p.
Ingredients
2 persons
2 aubergines |
½ tablespoon olive oil |
lemon juice |
50g soft goat cheese |
Preparation
1. Wash the aubergines, remove the stem end and cut the aubergines into thin slices.
2. Rub the slices with a drizzle of lemon juice and some pepper.
3. Place them on a flat dish and brush the slices with oil.
4. Grill the aubergines under a preheated grill for about 5 minutes until tender and light brown.
5. Crumble the goat cheese over the aubergines and let the cheese melt a little under the grill.
Menu suggestion: Delicious with chilli beans and brown rice.
