


Rosemary



Because of its aromatic fragrance, we encounter this herb not only in cooking, but also in bathroom products. Rosemary is an ancient remedy used in strengthening memory. Among the Greeks and Romans, this herb symbolised love, friendship and loyalty. The plant was used in marriage and birth rituals.

Storage
You can keep rosemary in cling film in the fridge. This hearty herb will keep for at least a week this way.
You can also dry the sprigs. Then you will have rosemary available all year round. Dried rosemary has a long shelf life.
Drying is done like this:
- Spread the sprigs on a clean (dry) tea towel.
- Turn them over occasionally.
- Can you crumble the leaves? Then they have dried. This can take about 2 weeks.
- Store the rosemary in a sealable jar or container. Store in a cool, dry and dark place.
Preparation
Since the flavour is strong, rosemary is especially suitable to accompany meat with a strong flavour, such as game and red meat. It survives a baking and roasting process very well. It can also be used in sauces and soups.
