


Sage



Sage is an herb with velvety, soft leaves. The colour is green- to silver-grey and the shape elongated and pointed. The leaves have a very aromatic fragrance and strong flavour. Therefore, be careful how much you add to dishes. The flavour of sage can quickly become overpowering.

Wash fresh sage shortly before use, dry it well and, if necessary, chop it finely.
Use sage in moderation, as the flavour is quite pungent. This way you avoid it overpowering your whole dish.
Add sage at the end of cooking to keep the flavour optimal.

Storing fresh sage
Store fresh sage in water or wrapped in plastic in the fridge in a dark place. You can keep fresh sage for several days.
Sage is a perennial plant. Plant it in a pot or in the ground.
You can also dry the sprigs. Then you will have sage available all year round. Dried sage keeps for a long time.
Dried sage
Drying is done like this:
- Spread the leaves on a clean (dry) tea towel.
- Turn them over occasionally.
- Can you crumble them? Then they are dried. This can take about 2 weeks.
- Store the leaves in a sealable jar or container. Store in a cool, dry and dark place.
