Kirkagaç melon

The kirkagaç melon is a so-called winter melon with Turkish origins. The melon is named after the area where it is grown: around the town of Kirkagaç. It is a fairly large, somewhat flattened melon with wrinkled skin. The skin is yellow-green in colour, the flesh light green to white. Only when the fruit is fully ripe, the flesh tastes slightly sweet. It is best to store a ripe kirkagaç melon in the fridge.
Preparation & storage
Storage
Store ripe melons in the fridge for a few days. Unripe melons only ripen on the fruit tray.
Keep melon pieces and wedges in the fridge, but wrap them in aluminium foil or plastic film. They will then keep for a maximum of 3 days.
Keep in mind that melons give off a strong, sweet smell. Dairy products can easily absorb this.
In the freezer, melons will keep for up to 12 months at a minimum of -18°C.
How do I know if the melon is no longer good? The melon is discoloured or mouldy. You can quickly recognise spoilage by looking, smelling or tasting.
Preparing
Cut the melon into wedges and remove the seeds. Cut the flesh from the skin into pieces or strips.
