Preparation & storage

    Storage
Lotus root is best kept in the fridge.

    Prepare
Peel the lotus root with a peeler. Then cut the lotus root into thin slices so you can clearly see the pattern.

Not going to process the lotus root immediately? Then it is better to put the lotus root in some water with lemon juice or vinegar to prevent discolouration.

You can boil the lotus root slices in water with a dash of vinegar for a few minutes. Then rinse the slices cold to stop the cooking process. This way, you can incorporate them into salads.

You can also stew the lotus root slices or fry them in a single layer in a frying pan, run them through a batter and deep-fry them or make them into chips. The possibilities are endless!
