


Horseradish



Horseradish is the white root of the horseradish: a plant with white flowers that grows wild but is also used as a garden plant. The taste of horseradish is similar to mustard or radish: nice and spicy! It can be bought grated in jars. Horseradish is rich in vitamin C.

Storage
Horseradish will keep for 2-3 weeks in a cool, dark place. Peel and grate only the piece you need and store the rest of the root wrapped in moist kitchen paper.
Prepare
Grated horseradish is delicious in yogonnaise or low-fat cottage cheese or in salads, e.g. with beetroot or potatoes.
You can also make a sauce out of it. In countries like Germany and the UK, horseradish sauce is part of the menu. Horseradish is widely eaten there with fish (Germany) and roast beef (Great Britain).
To do this, take 1 tablespoon of grated horseradish and mix it with 1 tablespoon of mustard, 1 onion, 2 cloves of garlic, 3 tablespoons of mayonnaise, 3 tablespoons of yoghurt. Stir everything well and season with salt and pepper. Enjoy!

Kitchen cupboard: 2-3 weeks
Cleaning horseradish
The spicy aromas can make your eyes water considerably. So make sure the room is well ventilated!
Peel the root and grate the white part. Do this half an hour at most beforehand, as the aromas in horseradish are volatile and the nice tangy flavour diminishes quickly.
