Salad with beetroot and horseradish

215gr vegetables p.p. & 35gr fruit p.p.
Ingredients
2 persons
1 bag of (rocket) lettuce (30g) |
400g cooked beetroot |
1 teaspoon grated horseradish (jar) |
2 tablespoons semi-skimmed yoghurt |
1 - 2 tablespoons vinegar |
1 small apple |
Preparation
1. Strip the skin off the beets and dice them.
2. Peel and dice the apple.
3. Mix the vinegar into the beets and apple and leave for 10 minutes.
4. Mix the yoghurt with the horseradish.
5. Divide the lettuce between a bowl and spoon the beet-apple mixture on top. Spoon the horseradish dressing on top.
Menu suggestion: Delicious with lentils and potatoes.
