Parsnips used to be a very popular vegetable; it is a predecessor of our winter carrot. Nowadays, we count parsnips among the 'forgotten vegetables'. Although in recent years, parsnips have been on the rise and we are seeing them more often in dishes again! It is a long, ivory-coloured root. Its flavour is intense, aromatic and slightly sweet.

Preparation & storage

    Storage
    Like carrots, you can store parsnips for a fairly long time, about 2 weeks. Keep them in a cool place (around 12-15°C).

    You can also freeze parsnips. Blanch them first for about 2 minutes. In a well-sealed plastic bag or container, parsnip can be kept for about 6 months at a minimum of -18°C.

    You can keep leftover cooked parsnips in a sealable storage container for 2 days in the fridge or 3 months in the freezer.

    How do I know if parsnip is no longer good? Parsnips are mouldy, have a sour smell or are limp. You can recognise this decay by looking, feeling or smelling carefully.

    Cooking: approx. 20 minutes
    Stir-frying: approx. 15 minutes

    Cleaning parsnips

    You can brush parsnips clean or peel them with a peeler. Wash the parsnip and cut into pieces if necessary.
