


Parsley root



Parsley root is a species of parsley. It is a 'forgotten vegetable'. The parsley root is grown for its large white root and not for its leaves. The root can grow up to 15 cm long. The root has a flavour reminiscent of celeriac and parsnip. The leaf of parsley root can be used in the same way as parsley. Parsley root is also called carrot parsley.

Storage
With the leaves, parsley root will keep for 4 days in the fridge. Without foliage even slightly longer.
Do you want to freeze parsley root? Blanch the root for 2-4 minutes and then freeze. In the freezer, parsley root can be kept for up to 12 months at a minimum of 18°C.
Preparing
Brush the carrots well under running water. Then cut a slice from the bottom and top.
You can dice or slice the parsley root and then boil or stew it. You can incorporate the parsley root into a puree. But you can also use the parsley root raw, shaved into a salad.
The parsley leaf can be used in the same way as parsley.
