


Parsley root



Parsley root is a species of parsley. It is a 'forgotten vegetable'. The parsley root is grown for its large white root and not for its leaves. The root can grow up to 15 cm long. The root has a flavour reminiscent of celeriac and parsnip. The leaf of parsley root can be used in the same way as parsley. Parsley root is also called carrot parsley.

Preparation & storage
Brush the roots well under running water. Then cut a slice from the bottom and top.
You can dice or slice the parsley root and then boil or stew it. You can incorporate the parsley root into a puree. But you can also use the parsley root raw, shaved into a salad.
Its leaves can be used in the same way as parsley.

Cooking: approx. 10 minutes
Blanching: 2 - 4 minutes
Stewing: approx. 12 minutes
