


Lychee



The lychee is an exotic fruit the size of a small plum. Lychees can be eaten on the spot. The brittle, pink skin around the white flesh is easy to remove with your fingers. The fruit is sweet and juicy and the aroma spicy. The fruit contains a stone, which you cannot eat. It is best to store lychees in a cool place.

Storage
It is best not to store lychees in the fridge, as there is a chance they will lose their flavour there. If you do, they will keep for about 2 weeks. In a cool place (approx. 12ºC) they will keep for one week. In the freezer, at a minimum of -18ºC, lychees can be kept for up to 12 months in a properly sealed plastic bag or container.
Preparation
The lychee, the English corruption of Litchi, is perfect for eating on the go. Tip: press the centre with two thumbs to break open the skin. Peel the fruit with your fingers and remove the (inedible!) seed.
Storage times
Refrigerator: 2 weeks
Freezer: 12 months
Cool place: 1 week
Cleaning the lychee
You don't need to wash the lychee. Press the centre with two thumbs so that the skin breaks open. Peel the fruit and remove the elongated, shiny stone. This is not edible.
