


Mamey Sapota



The mamey sapota, also called mamey apple or mamey zapote, is a round or oval fruit with a tip at the end that can weigh up to 2.3 kilos. The thick skin is brown, leathery and rough to the touch. The flesh is salmon-coloured to red, juicy, soft and mushy in consistency. It smells sweet and has a caramel-like flavour.

Storage
Mamey Sapotas do not keep for long. The fruit is harvested almost ripe and once ripe, Mamey Sapotas should be eaten within a few days. The Mamey apple is ripe when it turns yellow, is soft and fragrant. In the refrigerator, an unripe fruit will keep for up to 3-6 weeks. You can also freeze the Mamey, either whole or in pieces.
Preparation
Always try to eat the Mamey Sapota as fresh as possible. There are two ways to prepare the Mamey Sapota: cut the flesh away from the seed or cut the fruit in half and scoop it out. This depends on the ripeness of the fruit: if the fruit is not yet fully ripe, opt for the second method.
Should the fruit be well ripe now, remove the stem and the other end, cut the fruit every few centimetres and peel off the skin of the exposed flesh with each section.
