


White zapote



The white zapote is a spherical fruit about 12 cm tall. The ripe skin is greenish-yellow, smooth and shiny. The skin is best not eaten because of its bitter taste. The flesh contains a number of seeds and is white or yellowish. The flavour is sweet or sweet-sour, with a hint of vanilla, banana and peach.

Storage
An unripe white zapote can be stored outside the fridge. A ripe white zapote can be kept in the fridge for several days.
Preparation
Wash the white zapote before use. Remove the skin and seeds. The flesh discolours quickly, to prevent this you can sprinkle some lemon juice over it.
