

Mangistan


A mangistan (or mangosteen) is called the queen of fruits. It is a berry the size of a small orange. Its purple-brown skin is leathery and as much as 1 cm thick. Inside, the fruit is divided into 4 or 8 segments. The flesh is glassy white in colour, a little syrupy and the taste is fresh-sweet. Mangistan is best stored on the fruit bowl or in a cool place.

Storage
Mangistan has a limited shelf life, about 1-2 days on the fruit bowl. You can keep the mangistan slightly longer in a cool place (around 12°C). The flesh of a spoilt one turns brown and watery.
Prepare
Mangosteens have optimum flavour if you cool the flesh briefly before use. They are delicious in combination with sorbet ice cream and whipped cream (light). You can also use them as garnish on cakes or in a salad with iceberg lettuce, ginger and hazelnuts. But really, you should just eat such a delicacy on the go, delicious with some lime juice.

Cleaning Mangistan
Mangistan's skin hardens during transportation. Therefore, use a sharp serrated knife to cut the skin all around. Remove the top cap from the skin and remove the flesh. Refrigerate the cleaned pulp before use for optimum flavour.
