

Morels


Morello cherries are sour cherries. Like ordinary cherries, they are stone fruits with a hard stone in the middle. Morels look like ordinary cherries, the big difference is the flavour. Morels are so sour that only when the cherry is really fully ripe is it suitable to eat that way.

In a cool place (12-15ºC) morels will keep for 3-4 days, in the fridge up to 1 week.
Preparation
Only ripe morels can be eaten out of hand, but you should still like their sour taste. Therefore, morels are usually processed into compote, juice, jam or pie filling.
In Belgium, morels are used to make kriek (beer).

Refrigerator: 7 days
Cool, dark place: 3-4 days
Cleaning morels
To make compote, jams or for use in cakes, you should pulp the cherries using a sharp knife or a special cherry pitter. Beware: the juice gives stains that are difficult to remove.
