

Stem lettuce


Stem lettuce is a lettuce variety grown for its stem. Stem lettuce is also called celtuce, celery lettuce, asparagus lettuce or Chinese lettuce. The stem has a green, fresh core. The stem has a nutty flavour and is also a bit like cucumber. The leaves can also be eaten, but it is tougher and more bitter than head lettuce. For this reason, especially the young leaves are used.

Storage
The stem can be kept in the fridge for about a week.
Preparing
Peel the stem thickly, because of the thick 'milk' in the peel. If necessary, use an asparagus peeler.
You can then use the core in dishes raw, cooked, stir-fried or grated.
The leaves should not be eaten raw, but prepared like spinach.

Refrigerator: 7 days
Preparation times
Stir-fry: 1 - 2 minutes
Braising: 1 - 2 minutes
Cooking: 1 - 2 minutes
