Truffles are the highest valued and most expensive mushrooms in the world. There are many different types of truffles. The best are the white truffle, the perigord truffle and the summer truffle. They have an unmistakably strong aroma and typical flavour. Often only a very small amount of truffle is needed in a dish. Truffles are best kept in the fridge.
Preparation & storage
Storage
It is best to store truffles in a sealed box in the fridge. This is because truffles give off a lot of aroma. If you put something next to them, it will smell and taste like truffles too. This can be delicious, for example with eggs or cheese.
White truffles only keep for 7 days. A black truffle can be kept for up to 14 days.
Prepare
Cut or shave the truffle into thin slices.

Preparation times
Heat for a few minutes or scrape raw over a dish.
