


Velvet leg (Enoki)



The Enoki is the cultivated version of the velvet legume. It is grown in the dark which keeps it beautifully white. Adding extra carbon dioxide during cultivation gives the mushroom its characteristic long stalks. The Enoki is grown and sold in small bundles.

Storage
Use the Enoki as soon as possible after purchase. They can be kept in the fridge for several days.
Leave them in the packaging to prevent them drying out. Do not store mushrooms with strong-smelling vegetables, such as leeks and onions, as they easily pick up odours.
Preparing
Cut off a piece from the bottom and carefully separate the stalks. Carefully wipe off any remnants of earth with kitchen roll.
Like other mushrooms, do not boil, fry or braise them too long. Then the enoki will lose firmness and flavour.

Refrigerator: 2-3 days
Preparation times
Cooking: 5-7 minutes
Stir-frying: 2-4 minutes
Microwave oven: 2-3 minutes
Deep-frying: 2-4 minutes
Grilling: 2-4 minutes
Braising: approx. 10 minutes
Steaming: approx. 6 minutes
